    Ingredientes:

    1/4 cebolla blanca.
    4 nopales
    8 chiles guajillo
    1 diente de ajo
    3 jitomates
    Aceite de oliva
    ½ cucharadita de orégano seco
    4 huevos
    Sal
    Procedimiento:

    Poner agua a hervir en una olla. Enjuagar los nopales y cortarlos en cubos pequeños o tiras. En cuanto el agua hierba agregar los nopales y cocinar por unos 5 minutos hasta que cambien de color. Escurrir y reservar.
    Poner a hervir otra olla de agua. Desvenar y quitar las semillas de los chiles.
    Calentar unas 2 cucharadas de aceite de oliva en un sartén hondo. Antes de que esté muy caliente pasar los chiles unos 30 segundos moviéndolos.

    Ingredients:

    1/4 white onion.
    4 nopales
    8 guajillo peppers
    1 garlic clove
    3 tomatoes
    Olive oil
    ½ teaspoon dried oregano
    4 eggs
    Salt
    Procedure:

    Put water to boil in a pot. Rinse the nopales and cut them into small cubes or strips. As soon as the water turns green, add the nopales and cook for about 5 minutes until they change color. Drain and set aside.

    Bring another pot of water to a boil. Devein and remove the seeds from the chilies.

    Heat about 2 tablespoons of olive oil in a deep-frying pan. Before it gets too hot, stir the peppers for about 30 seconds. Remove them and set aside the oil. Boil them together with the tomatoes for about 5 minutes, removing the tomatoes first when the skin begins to open.
